Squash

The fruit of a squash or pumpkin plant, Cucurbita, cooked for the dense flesh under the rind. Winter squash is mature and starchy. Summer squash is watery and young.

Origin

A New World genus, grown worldwide.

Flavour

Sweet and earthy in a ripe winter squash, milder in a young one.

How to use it

Peel winter squash and roast or stew it. The seeds are edible too, once cleaned and toasted.

Storage

A whole winter squash keeps cool and dry for weeks. Cut pieces go in the fridge.
