Swede

The large yellow-fleshed root of a cabbage-family plant, Brassica napus. In Britain it is a swede. The same root is a rutabaga elsewhere.

Origin

A European root, probably a cross of turnip and cabbage, stored through winter.

Flavour

Sweet and earthy, with a cabbage edge.

How to use it

Peel the thick skin and boil, mash, or roast it.

Storage

Cool and dry, or in the fridge. A whole root keeps for weeks.
