Tapioca

The starch washed out of cassava root, sold as small pearls or as a fine powder. The root's fibre and juice are separated off. What remains is nearly pure starch.

Extracted from cassava, a tropical tuber.

Flavour

None of its own. Pearls turn chewy. The powder thickens without clouding a sauce as much as wheat flour.

How to use it

Soak pearls before cooking them in liquid. Use the powder as a thickener.

Storage

Airtight and dry.
