Tortillas

Flatbreads cooked on a griddle. Corn tortillas are masa from maize treated with alkali. Flour tortillas are wheat dough enriched with fat.

Origin

The maize version is Mesoamerican. The wheat version came later in northern Mexico.

Flavour

Corn tastes of the grain, toasty and a little sour. Flour tortillas taste softer and richer.

How to use it

Heat them in a dry pan until they puff and spot. Wrap them in a cloth so they stay flexible.

Storage

Refrigerate or freeze a pack. Stale tortillas revive in a hot pan.
