Turkish Delight

A gel of sugar, starch, and water, flavoured with rose, citrus, or mastic, and dusted with icing sugar. Nuts are often set in the jelly. The Turkish name is lokum.

Perfected in Ottoman confectionery and still made across Turkey and the region.

Flavour

Very sweet, perfumed, and softly chewy.

How to use it

Cut it into small pieces. It also melts into chocolate and biscuit recipes.

Storage

Airtight, so the starch dust does not liquefy. It sweats in a humid kitchen.
