The swollen root of Brassica rapa, a cabbage relative, with white flesh and a purple or green shoulder. The leaves are edible too.
Origin
A European root vegetable, long stored for winter.
Flavour
Sweet and peppery, sharper when raw.
How to use it
Peel and roast, mash, or add them to a stew. Young turnips need only a short cook.
Storage
Refrigerate, unwashed, and use them before they soften.
