Walnuts

The ridged kernel of the walnut tree, Juglans regia, taken out of a hard shell. The brown skin on the kernel is slightly bitter.

Origin

Native to Central Asia and grown in orchards across temperate countries.

Flavour

Rich, tannic, and a little bitter in a pleasant way.

How to use it

Eat them raw, toast them, or fold them into cakes and sauces.

Storage

They go rancid. Refrigerate or freeze them if you will not use them soon.
