Yautia

A starchy corm sold as yautia, malanga, or tannia. The skin is bark-like and hairy. The flesh is crisp and white, yellow, or pink, and turns soft when cooked.

Origin

A tropical aroid grown in the Caribbean and Latin America.

Flavour

Mild, nutty, and slightly earthy.

How to use it

Peel and boil or stew it, as in sancocho. The raw flesh can irritate skin.

Storage

Cool and dry, like a potato, and use it before it shrivels.
