Yellow Masarepa

Precooked yellow maize flour, milled from corn that was cooked, dried, and ground. It is the flour for arepas and hallacas, and it does not need the nixtamal step again at home.

Origin

A Latin American maize flour, especially Colombian and Venezuelan.

Flavour

Toasted corn, fuller in the yellow meal than in the white.

How to use it

Mix it with water and salt into a dough, rest it briefly, and griddle the cakes.

Storage

Airtight, cool, and dry.
