Aloo gobi is potato and cauliflower cooked with turmeric, cumin and chilli until the edges catch and the spices coat. It should not sit in tomato soup. A little tomato is a house choice. Ginger-garlic is not optional if you want it to taste like itself.

    Heat ghee, crack cumin, fry onion, ginger and garlic. Add turmeric and chilli.

    Add potato, then cauliflower, salt, optional tomato. Cover and cook, stirring, until both are tender and a little caught, 15–18 minutes.
