About

Batata harra is cubed potato, fried or roasted until the edges catch, then tossed in a pan with garlic, chilli, lemon and a pile of coriander. It is a mezze, not a side of sad roast potatoes.

Ingredients

Scaling multiplies the written quantities. Baking still prefers a scale.

Steps

  1. Step 1

Cube potato. Fry in oil until gold, or roast at 220°C 25 minutes. Salt.

    25 min
  2. Step 2

In a wide pan, warm garlic and chilli in a little oil 30 seconds. Toss potatoes, coriander, lemon.
