About

Creamy Tomato Soup is listed as starter from United Kingdom. The steps below are the imported TheMealDB method, not an editorial rewrite. Times shown were read from those steps.

Ingredients

Scaling multiplies the written quantities. Baking still prefers a scale.

Steps

  1. Step 1

Put the oil, onions, celery, carrots, potatoes and bay leaves in a big casserole dish, or two saucepans. Fry gently until the onions are softened – about 10-15 mins.

    15 min
  2. Step 2

Fill the kettle and boil it. Stir in the tomato purée, sugar, vinegar, chopped tomatoes and passata, then crumble in the stock cubes.

  3. Step 3

Add 1 litre boiling water and bring to a simmer. Cover and simmer for 15 mins until the potato is tender, then remove the bay leaves.

    15 min
  4. Step 4

Purée with a stick blender (or ladle into a blender in batches) until very smooth. Season to taste and add a pinch more sugar if it needs it.

  5. Step 5

The soup can now be cooled and chilled for up to 2 days, or frozen for up to 3 months. To serve, reheat the soup, stirring in the milk – try not to let it boil.

    1440 min
  6. Step 6

Serve in small bowls with cheesy sausage rolls.

Substitutions

  • onion shallot

Shallots are sweeter. Use the same volume, or a little extra onion if that is what you have.

  • potato (sweet potato or another starchy side) sweet potato or another starchy side

Cook time changes. Sweet potato browns faster.

  • tomato (passata or canned chopped tomatoes) passata or canned chopped tomatoes

Canned tomatoes are often better than pale fresh ones out of season.
