Tomatoes sieved to a smooth raw or lightly cooked pulp, with skins and seeds removed. It is unsweetened tomato, thinner than paste.

An Italian way of putting ripe tomatoes by, now sold in bottles and cartons.
Flavour
Clean, sweet-acid tomato.
How to use it
Pour it into sauces and soups as the tomato base. Simmer it if you want it thicker.
Storage
An unopened bottle keeps in the cupboard. Refrigerate leftovers.
