A broth simmered from vegetables such as onion, carrot, celery, and aromatics. The flavour is the dissolved sugars and savoury compounds of those vegetables.

Origin

A kitchen stock, also sold fresh, long-life, or as a powder.

Flavour

Savoury and gentle, sometimes sweet if carrot dominates.

How to use it

Use it as the liquid for soups, grains, and sauces.

Storage

Refrigerate fresh stock for a few days, or freeze it. An unopened carton follows its date.
