About
Kabsa is rice cooked in a tomato-spice broth with chicken or lamb, often finished with toasted nuts and raisins. The spice mix (kabsa/baharat: cardamom, clove, cinnamon, black lime if you have it) is the perfume. This is a home one-pot. Serve with a tomato salsa (daqoos) and yoghurt. Brown chicken or lamb, then build a tomato-spice broth with onion, garlic, and a mix of cardamom, clove, cinnamon, black pepper and dried lime if you have it. Cook the rice in that liquid so it takes the colour and perfume. Finish with toasted almonds or pistachios and a few raisins if your house does that. Serve with daqoos (a sharp tomato salsa) and yoghurt. The grains should be separate, not a risotto.

Machboos is a close cousin with its own stubborn name. A home one-pot will not match a catering tray and does not need to. The salsa and the yoghurt are how you cut the richness.

Named kabsa as a modern national plate sits on that older pilaf logic. Dried lime and cardamom are perfume, not decoration. You are cooking rice in a spiced meat broth and topping it. That is the dish.
