Mahshi is zucchini, eggplant, pepper or vine leaves filled with rice, herbs, tomato and sometimes mince, then cooked in a tomato broth until the rice is done and the vegetable is silk. This is a home tray of zucchini and peppers. It is Friday food and also a way to use a glut of summer produce. The rice should be seasoned before it goes in — you cannot salt the middle later. Hollow courgettes, eggplants or peppers, or use vine leaves if that is the pot.     Hollow zucchini and peppers, leaving walls. Mix rice, chopped herbs, onion, garlic, cumin, 2 tbsp oil, salt and a spoon of tomato.

    Stuff two-thirds full so the rice can swell. Stand in a pot. Pour remaining tomato, oil and water around.

    Cover and simmer or bake at 180°C 45–50 minutes until the rice is cooked and the vegetables are soft. Rest 10 minutes.
