About

Molokhia is minced jute leaf cooked in stock with a ta'leya of fried garlic and coriander. Frozen minced molokhia is how most homes outside Egypt do it. Spinach is a pale stand-in we will name. The slime is the sauce.

Ingredients

Scaling multiplies the written quantities. Baking still prefers a scale.

Steps

  1. Step 1

Simmer chicken for a light broth, 25 minutes. Shred. Chop greens fine.

    25 min
  2. Step 2

Fry garlic and coriander in butter until it smells toasted. Add greens and broth. Simmer 8 minutes. Lemon, rice, chicken.

History & culture

Egyptian (and Levantine) home pot. Rice or pita. Chicken on the side.

A pharaonic-adjacent green that is still Tuesday food. The garlic-coriander finish is the perfume.
