Capers

The unopened flower buds of the caper bush, Capparis spinosa, cured in salt or in vinegar. The smaller buds are the ones sold as capers. The fruit is a caperberry.

Salty, floral, and sharp.

How to use it

Rinse salted capers well. Add them late to a sauce so they stay distinct.

Storage

Refrigerate in their brine or salt.
