Cheese Curds

Fresh pieces of curd from cheesemaking, usually cheddar curd, before the cheese is pressed and aged. The protein network is what makes a very fresh curd squeak.

Origin

A dairy by-product eaten on its own, notably in Canadian poutine.

Flavour

Mild, milky, and salty.

How to use it

Eat them fresh, or melt them over hot chips. Older curds melt but no longer squeak.

Storage

Refrigerate and eat them soon. They are not an ageing cheese.
