Chimichurri sauce

A raw sauce of parsley, oregano, garlic, chilli, vinegar, and oil, chopped and stirred rather than cooked. Some versions use coriander as well.

Origin

From the Río de la Plata region, served with grilled meat in Argentina and Uruguay.

Flavour

Herby, sharp, and garlicky.

How to use it

Spoon it over grilled meat and vegetables. It can also sit as a marinade.

Storage

Refrigerate, with a film of oil on top, and use it within a few days.
