Chinese Broccoli

Gai lan, a brassica grown for its thick stems, blue-green leaves, and small florets. It is closer to broccoli than to a headed cabbage.

Origin

A southern Chinese vegetable, now grown in many market gardens.

Flavour

Bitter-sweet and mustardy, with a juicy stem.

How to use it

Trim the dry ends and blanch or stir-fry it. The stem needs a little longer than the leaves.

Storage

Refrigerate and use within a few days.
