Cinnamon Stick

A quill of dried cinnamon bark, rolled as the inner bark of the tree dried and curled. It is the same spice as ground cinnamon, left whole.

Origin

Peeled from cinnamon and cassia trees in Sri Lanka, China, Vietnam, and Indonesia.

Flavour

Sweet and woody, given off slowly into a liquid.

How to use it

Simmer the stick in stews, syrups, and rice, then lift it out.

Storage

Airtight and dark. A whole stick keeps its aroma longer than powder.
