Cranberry

The tart red berry of a trailing Vaccinium shrub that grows in acid bogs. The fruit is firm and very high in acid.

Origin

Native to the bogs of northern North America, and also gathered in northern Europe.

Flavour

Sour, astringent, and fruity. Sugar is what makes it pleasant.

How to use it

Simmer fresh or frozen berries with sugar for sauce. Dried cranberries are a different, sweetened product.

Storage

Refrigerate fresh berries for a couple of weeks, or freeze them.
