Dijon Mustard

A smooth mustard paste from brown or black mustard seeds ground with wine, verjuice, or vinegar, in the style of Dijon.

Origin

The method is Burgundian. Most jars today are made far from Dijon to the same recipe.

Flavour

Hot, sharp, and tangy, with less sweetness than yellow mustard.

How to use it

Whisk it into vinaigrettes and pan sauces, or spread a thin layer on meat.

Storage

Refrigerate after opening. It slowly loses its heat.
