Egg Wash

An egg beaten with a splash of water, milk, or just on its own, brushed onto dough. The proteins and sugars brown in the oven.

Origin

A baker's glaze made from a hen's egg.

Flavour

It should not taste of anything once baked, only shine and colour.

How to use it

Brush a thin coat on pastry or bread before baking. A second coat deepens the colour.

Storage

Make it when you need it. Leftover wash keeps a day in the fridge.
