Flat Rice Noodles
Wide, flat noodles made from rice flour and water, sold dried or fresh. They are the same dough as other rice noodles, cut into ribbons.

Origin
A staple noodle of southern China and Southeast Asia.
Flavour
Neutral and slightly sweet from the rice.
How to use it
Soak dried noodles until pliable, then finish them in the pan or in soup. Do not boil them to a mush.
Storage
Dried noodles keep airtight. Fresh noodles belong in the fridge and do not last.
