Miniature Marshmallows
Small pieces of a foam of sugar, glucose syrup, and gelatine, whipped and cut. The gelatine is what lets the sugar hold air.
Origin
A confection, sold in mini size for baking and hot drinks.
Flavour
Very sweet and vanilla-scented.
How to use it
Melt them into crispie mixtures and sauces, or toast them.
Storage
Airtight, so they do not dry and harden.
