Rhubarb

The leaf stalks of Rheum, a plant grown for those pink or green stems. The leaves themselves are discarded. The stalk is sharply acid and is cooked as a fruit.

Origin

The culinary rhubarb was developed from Asian species and became a British garden crop.

Flavour

Very tart, fruity once sweetened.

How to use it

Stew or roast the chopped stalks with sugar. Trim every bit of leaf away.

Storage

Refrigerate stalks for a few days, or freeze them.
