About
Crumpets are a yeasted, slightly bicarb-lifted batter cooked in rings on a griddle until the top is a moonscape of holes. You toast them later and drown them in butter. They are not English muffins (those are kneaded). The holes are the whole point. If you get a smooth top, the batter was shy of yeast or the pan was cool. The batter is wetter than a pancake: strong flour, yeast, a pinch of baking soda or bicarb, salt, and warm milk or water. Rest until it is lively, then cook in greased rings on a moderate griddle so the top sets into holes before you think about flipping. Cool on a rack. Toast later and let butter run into the craters. A smooth top means the batter was shy of gas or the pan was too cool. They freeze well once cooked.
