Khichuri is rice and moong or masoor dal cooked into a soft, spoonable pot with ginger, turmeric, cumin and often cauliflower or potato. In Bangladesh it is monsoon food, sick-day food, and also Eid and puja food when you dress it with fried onions and a roast. This is a weekday bhuna khichuri: toast the dal, then simmer until it is neither soup nor dry pilaf. Toast moong or masoor dal in a dry pot until it smells nutty, then add rice, ginger, turmeric, cumin, and water or a light stock. Cauliflower or potato can go in as the pot softens. Cook until it is spoonable: neither a dry pilaf nor a thin soup. Fried onions and a knob of ghee are the dressed version. Achar and a fried egg turn the rainy-day pot into a meal. Taste for salt at the end; dal hides it.

    Rinse rice and dal. Dry-toast the dal in the pot 2 minutes until nutty. Add ghee, onion, ginger, garlic, bay, cumin, turmeric and chilli.
