About
A Kerala fish curry is usually coconut (ground or milk), a souring agent (kokum, tamarind or raw mango), chilli, turmeric, fenugreek and a lot of curry leaves. The fish goes in at the end so it does not shred. This home pot uses tamarind and coconut milk because kokum is harder to find. It should be sour and coconut-rich, not a tomato masala with a fish afterthought. Bloom mustard seed, fenugreek and curry leaves in coconut oil, then build a gravy of chilli, turmeric, onion or shallot, and coconut milk or ground coconut. Sour it with tamarind, kokum or raw mango — tamarind is the supermarket path. Slide the fish in at the end so it does not shred. It should be sour and coconut-rich, not a tomato masala with a fish afterthought. Rest the pot off the heat. Rice or puttu on the side.

Heat oil, crackle mustard seeds and curry leaves. Soften shallot, ginger, garlic and chilli. Turmeric.

Slide in the fish. Cook gently 5–7 minutes until just opaque. Rest 5 minutes. Rice or kappa.
