Royal court cuisine, Buddhist temple cooking, and farmhouse fermentation all still sit on the modern table. Chilli arrived in the 16th–17th centuries and was adopted so thoroughly that it now feels ancestral. The 20th century added wheat noodles, American surplus ingredients, and a global restaurant language — without dropping the logic of rice, soup and shared side dishes.
